At this time of year the chives are flowering. The petals are great scattered over a salad as a garnish, or alternatively pop a few whole flowers into a bottle or jar with some white wine vinegar, leave for a few weeks, and you have the perfect tangy, slightly pickled-onion-like vinegar for your chip! And the vinegar will take on the pretty pink colour of the flowers.
Chive Flower Vinegar
The perfect vinegar for a good ole chip.

Ingredients
- 300 ml white wine vinegar
- 5 chive flowers
Directions
- Step 1
- Simply put your vinegar into a sterilised container, such as a bottle or jar, along with the flowers. Leave for around 6 weeks until the vinegar has taken on the ‘oniony’ flavour you prefer.
- Step 2
- Alternatively decant the finished product into a bottle of your choice if you don’t want the flowers.
